CARBON-NEUTRAL Bakery

We make our pastries at our new Boiceville bakery — a net-zero facility, running on 100% renewable energy. Our energy comes from a 366kW on-site solar array. There are no fossil fuels used in the building. We believe we are the first commercial bakery in the US to operate entirely without fossil fuels.

Respecting Tradition

Our pastries are inspired by the best European and American traditions, representing a mix of classics done well. They are made fresh, by hand, every day. They are available at our four Hudson Valley cafe locations as well as our NYC Greenmarket locations.
