Vanilla Eclair
What makes it special
This pastry originated from France. It has a long shape, made with Pate a Choux and filled with Pastry cream. It is traditionally topped with chocolate fondant which we make using the award-winning chocolate from local supplier FRUITON.
Ingredients
Pastry Cream: Whole milk, egg yolks, granulated sugar, creme fraiche, egg yolks, cornstarch, butter, vanilla beans.
Pate A Choux: eggs, flour, butter, milk, brown sugar.
Chocolate Ganache: FRUITION Hispaniola chocolate, neutral glaze, heavy cream.
