Fall is for Hearty Breads

Our hearty Nordic Breads are just right for these chilly, windy autumn days.

We pull inspiration from tried-and-true Nordic baking traditions with these fully sour, 100% whole grain, nutritionally dense breads.

The special breads are handmade in small batches in our original artisan bakery in Boiceville, tucked into the heart of the Catskill Mountains. Each loaf is made using certified organic, stone-ground flour from grains grown entirely in New York State. Through these healthy and hearty breads, we’re supporting our local farms, farmers, and a more sustainable grain infrastructure.

Fully fermented and baked with ancient grains einkorn, rye, and spelt, the Nordics Breads are also good for YOU. Naturally low in gluten content, these grains are gentler on sensitive digestive systems than traditional wheat.

Fruit & Seed Brød

This rye and spelt bread is inspired by the nutritious, flavorful rye breads of Denmark. Our Fruit & Seed Brød is made using certified organic, stone-ground grain from our local milling partners, and is studded with apricots, and sunflower and pumpkin seeds.

Ingredients: water, organic whole dark rye flour, organic whole spelt flour, organic pumpkin seeds, organic sunflower seeds, organic dried apricots, organic dark malt syrup, organic whole rye, organic blackstrap molasses, and salt

Einkorn Brot

Our Einkorn Brot is nutritionally dense, has deep and nutty flavor, and is made in the Germanic tradition using 100% New York State grown and milled einkorn (an ancient grain).

Ingredients: organic einkorn flour, water, organic cracked einkorn, organic sprouted einkorn, organic whole einkorn, and salt

Rye Brød

This rye bread is inspired by the nutritious, flavorful rye breads of Denmark. It is made using certified organic, stone-ground flour from our local milling partners.

Ingredients: water, organic whole dark rye flour, organic cracked rye, organic whole rye, and salt


Sliced thinly, toasted or warmed, and generously topped with a schmear of local, cultured butter plus a dash of flaky salt, these satisfying and deeply flavorful loaves are the perfect compliment to a steaming cup of tea on chilly Autumn mornings.
