Baker's Muffin

What makes it special

The baker's muffin is composed of the odds and ends of croissant dough left over from cutting that particular shape. We toss these bits of buttery, layered dough in cinnamon sugar and put them in a muffin cup to bake, which produces a light, crunch muffin that's a joy to pull apart. This pastry embodies both a baker's economy and creativity.
